WHere is an easy take on a beverage from the seasonal menu. This is a large-volume pre-mixed that is bursting with the essence of the Christmas time, making it perfect for hosting a holiday party. Any leftover cordial for brunch beverages, desserts, or to mix additional servings of the drink.

Ingredients for the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar
For the Premix (makes 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Directions
Making the Syrup: Combine all the items inside a pan, bring to a simmer, mixing to dissolve. Then, take off the burner and let it to cool completely. Transfer into a clean bottle, seal keeping it chilled, it can be stored for about one month.
For the Cocktail Base: Mix every liquid ingredients in a large bottle, leave to sit for one hour, then filter it , ideally through cheesecloth, to ensure it's perfectly clear.
To serve: Add 85ml from the batch mix into your stirring glass containing ice, and agitate gently for a minute until cold. Strain into a cold coupe glass or similar, decorate with the cranberries and finish by giving it a brief mist with the mandarin essence over the top.
